So I am now into week 2 of my Slimming World journey and I am really enjoying it, I lost 7lbs in a week! I love cooking from scratch and after the success of my last recipe post, I thought I should share a syn free recipe every single Thursday with you all.
I just love comfort food, especially in the Winter and pasta bake is probably the best comfort food ever. So today's post is a meatball pasta bake that is completely syn free providing you use the cheese as your Healthy Extra A. Of course you can make this without the cheese or you can syn it should you need to, either way its much healthier than your average jar junk pasta bake.


- low calorie spray
- 500g of 5% or less beef mince
- 1 large onion, diced.
- 5 large mushrooms, sliced.
- 1 egg, beaten. 
- salt
- 2 cloves of garlic, finely diced
- mixed herbs
- 3 tbsp of tomato puree
- half a pint of chicken oxo cube in boiled water
- 1 can of chopped tomatoes
- 500g of pasta
- mild cheddar cheese 120g (hexa 30g per portion or syn)


1. beat one egg in a large mixing bowl and add the mince, using your hands mix the mince and the beaten egg together into a dough like form. 
2. Break off chunks of the mince and roll into meatballs, place onto a baking tray sprayed with low cal spray, I usually get about 12-15 meatballs per 500g. Cook in the oven for 25 - 30 minutes at 180 degrees and are browned.
3. Whilst your meatballs are in the oven boil 500g of pasta for 12 - 15 mins on a high heat in boiling water with a pinch of salt, stirring regularly. 
4. When the meatballs are cooked you can either put them all straight into a bowl or you can do what I do by cutting them in half to make them go further, put them to one side for a few minutes.
5. Take a saucepan and pour in the tin of tomatoes, chicken stock, tomato puree, onions, mushrooms, mixed herbs and garlic, put onto a medium heat on the hob.
6. Once the pasta sauce ingredients have been mixed together well and beginning to simmer, add your meatballs to the sauce and stir continuously for 3 minutes.
7. Turn down the heat on the pasta sauce and meatballs allow to simmer for 15 minutes, occasionally stirring. 
8. Drain pasta and pour into a dish suitable and big enough for the bake.
9. Pour your pasta sauce and meatballs over the pasta and mix together until the sauce and meatballs is evenly spread throughout the pasta.
10. Sprinkle grated cheese over the top of the pasta and bake in the oven at 180 degrees for 25 minutes.
11. Serve with a side of speed veg, I chose broccoli because it's my fave veg.
