I have tried and tested the spice combination for this recipe a million times and last night I finally got it right and it was delicious! Obviously it isn't 100% KFC but it's pretty goddamn close and is a great way to clear up those fried chicken cravings that are hard to resist. I have tried a million and one recipes on Pinterest and none of them worked out for me, so this recipe is a combination of so many that I have tried by adding, changing and taking away some of the ingredients.


Low calorie cooking spray
500g of chicken breast mini fillets
4 slices of wholemeal bread
1 tablespoon of paprika
1/2 tablespoon of cayenne pepper
1 tablespoon of garlic granules
1 tablespoon of mixed herbs
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 1/2 chicken oxo cube crushed
1 egg beaten


1. Break up the bread into small pieces and whizz in a blender until all the bread has completely turned into bread crumbs.
2. Before you take the bread crumbs out of the blender, add all your spices, your crushed oxo cubes and blend again until the spices and breadcrumbs are consistently mixed together.
3. Preheat your oven at 190 degrees.
4. Take your spiced bread crumbs out of the blender and spread evenly on a plate, add your beaten egg to a bowl and begin to bread the mini chicken fillets.
5. To bread the chicken, simply soak the fillets in the beaten egg and roll over the plate of spiced breadcrumbs until covered and place into a baking tray that has already been sprayed with low calorie cooking spray, repeat with all fillets.
6. Once you have breaded all the chicken and added to the baking tray, spray the chicken with low calorie cooking spray.
7. Bake in the oven for 25 minutes or until the breadcrumbs have browned and look crispy.
8. Serve with salad & a side of your choice, my favourite is syn free wedges. 

This meal is syn free using your HEXB, however if you have used your HEXB for the day, syn accordingly.
