NOT SO NAUGHTY BEEFY NACHO WEDGES

It has been a long time since I posted a recipe on my blog but they are by far my most popular posts on my blog, with 12K views on my garlic, salt and pepper chicken recipe alone. So I figured I better do another and staying true to my healthy but comforting unintentional theme of recipes, here is my Slimming world friendly, syn free not so naughty beefy nacho wedges recipe. 





INGREDIENTS (SERVES 4)

400g of lean beef steak mince at 5% fat or less
4 large baking potatoes
1 large onionN1 can of tinned tomatoes
2 tbsp of tomato puree
2 tbsp of garlic/garlic granules
1 tbsp of mixed herbs
2 tbsp of paprika
1.5 tbsp of cumin
1 tsp of cayenne pepper powder
1 tbsp of salt 
1 tsp of ground black pepper
120g of cheddar cheese (divide by four is 30g HEXA portion)

PREP TIME - 10 MINS

COOKIN TIME - 40 MINS


METHOD

1. Slice your baking potatoes into wedges, lightly season with salt and pepper, spray with low-calorie spray oil and put into the oven at 200 degrees.
2. Fry 400g of beef steak mince on a medium heat and add your large onion diced to the mince halfway through frying the mince.
3. Whilst your mince and onions are cooking, mix the cumin, paprika, mixed herbs, garlic, salt, cayenne pepper powder and black pepper together. 
4. When the mince and onions are cooked, add tinned tomatoes, tomato puree and your mix of herbs to the frying pan, stir evenly throughout the mince, once mixed into one consistent sauce, cover and simmer on medium heat for 20 mins, stirring occasionally. 
5. Whilst your mince is simmering, shake up the wedges in the open and respray with low-calorie spray oil.
6. After 20 minutes, if the mince and sauce is of a thick consistency and you're happy with the taste, pour mince over the wedges in the oven. Spread evenly across the wedges and put back into the oven for 10 minutes.
7. After ten minutes add the 120g of cheese and spread all over the mince and wedges evenly, place back into the oven for another 10 minutes.
8. Serve with sour cream (if you have some syns to spare) and your choice of vegetables.
